When I code in a script file the following statement:

SortByName(Ascending)

Does that mean"sort files alphabetically" ?

How do I tell MyDefrag to put them on the fast end of a hard disc?
How do I tell MyDefrag to put them on the slow end of a hard disc?

When I look on a MyDefrag map: Is the fast end of a hard disc visually at the top or the bottom of the window?

Do all hard discs work the same way?

More exactly sorted by full pathname. i.e. sorted according to folder path, and then according to filename.

Default way of scripts is starting at fast end and approaching toward slow end. So First file zones are at fast end, unless you explicitly request processing reorder.

But there is no much sense to write what is already written. I  recommend to read manual pages , especially MakeGap and AddGap. Then ask for remaining confusion, otherwise you will get only fragments of knowledge by each question.  Until than I advice using provided scripts.

Fast end is on the bottom, unless MyDefrag is by script instructed to the opposite. In is just displaying preference.

In this context yes. Magnetic Disks are numbering their logical sectors from outer cylinders. There is maximal linear velocity and angular data density, therefore maximal transfer speed.
