To not overwrite old log(s) I've attempted to include %date% or %time% into logfile name, but failed. Them were included only literally. What is the right way to save several old logs, pointing them with time marks? The way working in .cmd (echo hello >"%date%text.txt") does not work as parameter -l for JkDefragScreenSaver.exe.

Sorry if this was described earlier, I could not find answer for my question by searching, sorry for my English, and thanks for reading this.

The JkDefragScreenSaver commandline does not support macros. Sorry, but what you want is only possible with the Windows version of JkDefrag, not the screensaver.

The successor to JkDefrag is currently in beta, see http://www.mydefrag.com/. It has a scripting language, and in the scripts you can use the AppendLogfile and WriteLogfile commands to write to any file you want.
